Head Chef

HEAD CHEF - Camp Weequahic, Lakewood, PA 

Seasonal Summer Residential Camp (June 1 –September 8, 2026) | On-site housing & meals

OVERVIEW

Lead a 23-person kitchen team to deliver 3 hot meals + 2 snacks daily for 600-700 campers/staff—on time and in full quantity. Oversee ordering, stocking, food preparation and service while complying with camp policies and visa-agency restrictions.

REPORTS TO: Assistant Director (James Stassen)

DIRECT REPORTS: 23 kitchen/dining staff

KEY DUTIES

  • Menu & Nutrition: Plan/Adjust weekly menus per Assistant Director’s guidance; accommodate allergies; balance cost/seasonality.
  • Procurement & Ordering: Work closely with Tavezio for all orders, place weekly orders (proteins, produce, dairy, dry goods), confirm deliveries.
    • Assist with the unloading, inspection, and proper storage of all Kitchen and Dining Room deliveries using FIFO rotation
  • Inventory & Stocking: Conduct twice-weekly counts; maintain par levels; enforce FIFO rotation.
  • Production & Service: Scale recipes for 700 portions; batch-cook to hit exact meal times (8:15 AM / 8:45AM/ 12:30 PM/ 1:00PM / 5:30 PM/6:00 PM).
    • Maintain the breakfast, salad and pasta bars
    • Ensure serving lines are fully stocked and replenished throughout service to prevent delays or shortages.
    • Monitor cooking times and temperatures to guarantee every dish is served hot (≥140°F / 60°C) and on schedule
    • Provide campers and staff with a pleasant and friendly Dining Hall experience.
    • Service Flow: Prevent delays/shortages, restock bars 
  • Team Leadership: Schedule, train, and supervise 23 staff; assign prep, service, and cleaning tasks.
  • Food Safety: Enforce ServSafe/HACCP; log temperatures; ensure hot food and sanitary conditions.
  • Visa Compliance: Adhere to all work-hour, duty, and reporting rules set by sponsoring agency.
  • Waste & Equipment: Minimize waste; coordinate repairs with maintenance director or assistant director.

GENERAL EXPECTATIONS

  • Arrive on time; stay until dismissed.
  • Model professionalism; prioritize campers.
  • Perform additional duties as needed.
  • Follow Camp Weequahic Staff Handbook.

ESSENTIAL FUNCTIONS

  • Must be able to lift and carry 50lbs.
  • Must be able to easily stand and work for at least 3 hours continuously
